Test Kitchen tips for our scone recipes
- Use a round-ended knife to ‘cut’ the milk through the flour and butter mixture. The finished scone dough should be soft and sticky, just holding its shape. If you need to add a little flour when you turn it onto the floured working surface, be sparing.
- To ensure scones rise evenly with straight sides, cut out the scones using a sharp metal cutter; remove the cutter in an upward, rather than a twisting motion.
- We prefer to cook scones barely touching each other in a lightly greased shallow aluminium cake pan. The sides of the pan will keep the scones straight as they rise but you will need to cook them slightly longer than you would if on an oven tray.
- Scones need to rise quickly to have a light even texture, so your oven needs to be very hot. Get to know your oven well as it may be better to cook the scones in the top third or bottom third of the oven.
How long do scones keep?
These scone recipes are best made close to serving time. Scones can be kept in an airtight container for 2 days and frozen for up to 2 months. You can freeze uncooked scones and then bake them straight from the freezer!
