Rinse fish under cold running water, then pat dry with paper towel. Place each fish on a large piece of greased foil. Using a sharp knife, cut three shallow slits on each side of the fish.
Divide three-quarters of the ginger, the garlic, lemongrass and lime slices between the cavities of the fish. Combine kecap manis, sweet chilli sauce, lime juice, fish sauce and sesame oil in a jug. Pour half the sauce mixture over the fish; reserve remaining sauce mixture for serving. Fold foil over fish to seal and form parcels.
Preheat a 7-litre air fryer to 200°C for 3 minutes.
Taking care, place the fish, side by side, in the air fryer basket; at 200°C, cook for 10 minutes.
Unwrap foil to expose the top side of the fish; spray with cooking spray. Reset the temperature to 180°C; cook for a further 10 minutes until cooked through.
Meanwhile, combine the green onion, coriander, snow peas and remaining ginger in a bowl.
Transfer fish to a large platter, drizzle with remaining sauce mixture and top with green onion mixture; serve with lime cheeks.
To blanch snow peas, place in a heatproof bowl, cover with boiling water and stir until bright green; drain immediately, then cool under cold running water.
