Preheat oven to 180°C (160°C fan-forced). Grease a 19cm x 30cm lamington or slice pan. Line base with baking paper, extending paper 5cm over long sides.

For the topping, place the brown sugar, almonds, oats and coconut in a medium bowl. Rub in the butter between your fingertips until combined.

Beat the eggs in a small bowl with an electric mixer until pale and creamy. Add the caster sugar and continue to beat for 5 minutes or until the mixture is thick and forms ribbons. This means when the mixer is turned off and the beaters or a spoon is lifted out of the mixture, a trail is left across the surface for a moment before it sinks. Stir in the vanilla and extra butter.

Add the sifted flour, cinnamon, ginger and salt, then milk, stirring through gently. Add the apples and make sure all the apples are coated in the batter. The batter will be quite runny. Pour into the pan. Sprinkle the topping evenly over the batter in the pan. Bake for 35 minutes or until golden brown. Cool in pan.

Lift slice from pan. Cut into pieces to serve.

Suitable to freeze. Butter suitable to microwave.
