This recipe perfectly balances sweet and tart, creating a wonderfully creamy and flavoursome lemon slice. It’s also simple to make, it’s sweet and zesty, for a welcome treat that’s a great pick-me-up when you hit that mid-afternoon slump.

Lemon slice
Grease 19cm x 29cm slice pan, line base and two long sides with baking paper, extending paper 5cm over long sides.
Process 200g of the biscuits until fine. Chop remaining biscuits coarsely.
Combine butter, milk, rind and juice in small saucepan, stir over low heat until smooth.
Combine processed and chopped biscuits in medium bowl, stir in butter mixture. Press mixture firmly into pan refrigerate, covered, about 20 minutes or until set.
Meanwhile, make lemon icing.
Spread icing mixture over slice. Refrigerate until firm before cutting into 24 squares.

Stir ingredients in small heatproof bowl over small saucepan of simmering water until smooth.
