For a quick pickled onion, combine onion, vinegar and sugar in a medium bowl. Stand for 10 minutes.
Spread the bread slices generously with mayonnaise. Top half the slices with lettuce, tomato, cheese and ham; season to taste. Top with mustard, cucumber and drained pickled onion. Top with remaining bread slices.
