Method
1.Grease four deep 1¼ cup (310ml) microwave-proof dishes.
2.Make mixed berry sauce. Bring berries, sugar and a tablespoon of water to the boil in small saucepan. Boil for 1 minute and remove from the heat.
3.Sift flour into medium bowl. Add sugar, milk, rind and butter; whisk until batter is smooth.
4.Divide berry sauce among dishes then top with batter; dust with sifted icing sugar. Pour the boiling water over puddings. Microwave, uncovered, on MEDIUM (55%) about 10 minutes.
