Basic sausage rolls

Sausage rolls are a bakery classic that can be surprisingly easy to recreate at home, and you can’t go wrong with this basic sausage roll recipe. The combination of beef mince and sausage mince, along with seasoning gives it a deliciously savoury flavour that stands up to just about any store-bought version, and puff pastry makes it easy to get that crispy, flaky outside. Best of all, they only take about 35 minutes to make. Then all you need is a generous dollop of tomato sauce

Preheat oven to 220°C. Line oven trays with baking paper.

Combine onion, breadcrumbs, sausage mince and beef, egg, paste, sauce and parsley in a large bowl.

Cut pastry sheets in half lengthways. Place equal amounts of filling mixture lengthways along centre of each pastry piece (see tips); roll each pastry piece, from one wide edge, to enclose filling. Cut each roll into six pieces; place rolls, seam-side down, on trays. Brush with extra egg, sprinkle with sesame seeds.

Bake rolls for 25 minutes or until golden and puffed. Serve sausage rolls hot with tomato sauce or chutney, if you like.

An easy way to make sure that you get an equal amount of filling mixture in each sausage roll is to pipe it down the length of the pastry, using a piping bag fitted with a 2cm plain tube.

If you’re new to making sausage rolls at home or need a few extra pointers, here are some key details to keep in mind:

  • You can make stale breadcrumbs by using 2-3 day old bread and process in batches in your food processor. You can check out our how-to guide for more details and a video, too.
  • Remember to preheat your oven so you get the best results when your sausage rolls cook. It takes about 10 minutes for most ovens to heat up, so it’s one of the simplest (and most effective) steps you can take.
  • Leave some space between each sausage roll on the tray for even cooking. If you don’t have enough room on a single tray, you could cook them in batches or on different oven shelves. Just remember to check them as different trays and shelves could mean they cook at slightly different times depending on your oven.
  • Uncooked sausage rolls keep well in the freezer for up to 3 months. So, if you only want a few at a time, you could simply store the rest. Allow an extra 5 minutes when baking from frozen.
