This easy garlic butter fish & crispy potatoes tray bake is a fast and fabulous dinner that is both tasty and family-friendly. We used blue eye in this recipe, but any thick fillet of fish can be used. If you prefer using a thinner fillet, simply reduce the cooking time.

1.Preheat oven to 240C (220C fan-forced). Line a large oven tray with baking paper.
2.Place the potatoes in a bowl. Add oil, season with salt and freshly ground black pepper, and toss to combine. Place in a single layer on the prepared tray. Bake for 25 minutes, or until golden.
3.Meanwhile, combine the butter and capers in a small bowl.
4.Remove the potato mixture from the oven and push them up one end of the oven tray. Arrange fish fillets on the same tray and spread the butter mixture evenly over each fillet.
5.Return to the oven and bake for another 10 minutes, or until fish is just cooked through.
6.Serve the fish with potatoes and salad leaves.
