Add ice to a highball glass. Add the ginger beer, cranberry juice and sparkling wine.

Add 3 frosted cranberries (see below) to a cocktail skewer. Place on top of the glass.

How to make frosted fruit garnishes

Frosted cranberries are great to garnish drinks, cakes and desserts. Whisk an egg white until frothy, dip frozen cranberries in egg white, drain. Toss in caster sugar; place on wire rack to set. For extra crunch, double dip once set. Frosted cranberries can be made a day ahead, store at room temperature in a single layer.
