Apricot chicken is a classic family dinner, and this easy one-pan recipe is a new favourite for maximum flavour with minimum effort. It uses tangy and sweet apricot nectar along with in-season Australian apricots and a medley of warm spices. Or try a more traditional version of apricot chicken featuring French onion soup mix and apricot nector.

Preheat oven to 220°C (200°C fan forced). Grease and line a large roasting dish with baking paper.

Combine apricot nectar, kecap manis, honey, ginger, garlic and chilli flakes in the roasting dish. Add the chicken and toss to coat. Tuck the onion, star anise, cinnamon and apricots amongst the chicken mixture. Roast for 45 minutes, basting and turning the chicken twice during cooking until chicken is browned and cooked through.

Serve topped with coriander sprigs and accompany with steamed rice and broccolini.

What is kecap manis?

Kecap Manis, also known as sweet soy sauce, is an Indonesian sauce that uses palm sugar in the production to create its thick and rich texture.

Chicken drumsticks and other cuts

We’ve used a combination of chicken drumsticks and chicken thigh cutlets in this apricot chicken recipe. You can also use chicken marylands and butcher them yourself instead of buying drumsticks and thigh cutlets separately.
