Method

1.Heat butter and oil in large frying pan, add carrots, cook, covered, until just tender.
2.Add sugar, cook, stirring, about 10 minutes or until carrots caramelise. Stir in parsley and vinegar.

This recipe can be made several hours ahead, reheat just before serving.
