1.Combine 200g low-fat cottage cheese, 1/3 cup coarsely grated reduced-fat cheddar cheese, 1 cup shredded baby spinach leaves, 1 thinly sliced green onion, 1 finely grated small carrot, 1 tablespoon roasted sesame seeds and 2 teaspoons lemon juice in medium bowl.
2.Divide 30g mesclun and between four slices of wholemeal bread and spread with cheese mixture; top with another four slices of wholemeal bread. Cut sandwiches into squares.
