Baked eggs with ham and spinach

At first glance it might seem like green eggs and ham but that's just the baby spinach. Try this quick meal for a delicious and easy feed.

Method

1.Preheat oven to 180°C/350°F. Grease four ½-cup (125ml) ovenproof dishes.
2.Divide ham and spinach into dishes. Break one egg into small bowl, then carefully slide egg from bowl over ham and spinach in dish. Repeat with remaining eggs. Sprinkle dishes with equal amounts of cheese.
3.Place dishes on oven tray; bake, uncovered, about 10 minutes or until egg yolk is just set.

Prosciutto is a great alternative for ham in this recipe. Prosciutto is a type of Italian ham; salted, air-cured and aged, it is usually eaten uncooked. There are many styles of prosciutto, one of the best is parma ham.
