Baked rice custard

Equally delicious hot or cold, these individual baked rice custards take just a few minutes to put together and are the perfect way to use up leftover rice.

Method

1.Preheat oven to moderate, 180°C. Place four 1-cup capacity ovenproof dishes in a large baking pan.
2.Whisk milk, cream, eggs, sugar and vanilla together in a medium bowl, until well combined. Stir in rice and cinnamon.
3.Pour mixture evenly into dishes. Add enough boiling water to baking pan to come halfway up sides of the dishes. Sprinkle custards with nutmeg. Bake 45-50 minutes, or until custards are just set. Serve warm or cold.
