Method

Beetroot and cucumber salad

1.Preheat oven to 200°C.
2.Place beetroot in oiled baking dish and bake, uncovered, about 20 minutes or until tender. Cool slightly; peel.
3.Combine beetroot, cucumber, onion and celery in large bowl; drizzle with dressing.

Dressing

4.Combine all ingredients in screw-top jar; shake well.

Can be made a day ahead up to step 2, and left covered in the fridge.
