Method
1.Preheat oven to 180°C (160°C fan-forced). Brush base and side of a 1.25-litre (5-cup) pie dish with dairy blend.
2.Sprinkle blueberries over base of prepared pie plate. Combine flour, caster sugar and almond meal in a bowl.
3.Whisk eggs, egg whites, milk and essence in a large jug. Gradually add egg mixture to flour mixture, stirring, until combined and smooth.
4.Pour batter over blueberries. Bake for 40 minutes or until just set. Just before serving, dust with icing sugar.
Use reduced-fat alternatives in place of the milk and butter, if you like.
