Method
1.Grease 2-litre (8-cup) pudding steamer. Spoon jam into base of steamer.
2.Beat butter, extract and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Transfer mixture to large bowl, stir in sifted flour and milk in 2 batches.
3.Spread mixture into steamer, cover with greased foil, secure with string or lid. Place steamer in large saucepan with enough boiling water to come halfway up side of steamer, boil, covered, about 1½ hours or until firm. Replenish with boiling water as necessary.
Recipe is best made just before serving. Use the jam of your choice in this pudding.
