Method
1.Halve cherry tomatoes and finely chop shallots. Process half each of the tomatoes and shallots with olive oil and vinegar until smooth; season to taste.
2.Cook spaghetti in a saucepan of salted boiling water until almost tender; drain. Transfer to a large bowl.
3.Stir in pureed tomato mixture, remaining tomato halves, remaining shallot, pine nuts, pepitas and sunflower seeds to combine. Stir in rocket leaves.
4.Serve pasta topped with grated vegetarian parmesan-style cheese or crumbled soft goat’s cheese, if you like.
