Method
1.Heat fried rice in microwave according to directions on packet.
2.Meanwhile, whisk eggs and 2 tablespoons water in large bowl until combined; season.
3.Heat oiled medium frying pan over high heat. Cook quarter of the egg mixture about 1 minute or until starting to set. Spoon a quarter of the hot rice along centre of omelette. Fold omelette into three; slide onto warm plate.
4.Repeat with remaining egg mixture and rice to make four omelettes. Sprinkle with coriander and chilli.
Microwave fried rice is a commercially prepared mixture of egg, ham, vegetables and rice. It is available from supermarkets. You can make your own fried rice if you prefer. Serve with chilli sauce and lime wedges.
