Method
1.Preheat oven to 180°C (160°C fan-forced). Grease two 12-hole (1-tbsp/20ml) mini muffin pans.
2.In a medium bowl whisk egg-whites until frothy. Stir in butter, rind, almond meal and sifted icing sugar and flour.
3.Drop heaped teaspoons of mixture into each muffin pan hole; top each with a blueberry.
4.Bake about 10 minutes. Stand friands in pans 5 minutes; turn onto wire rack to cool.
5.Dust with extra sifted icing sugar.
