This low-sugar rocky road not only looks good, it also tastes divine thanks to a combination of coconut, peanuts, macadamias and Noshu 98% Sugar Free Choc Baking Chips.
1.Spray your baking tin with non-stick cooking spray then line with baking paper, including the sides to avoid the rocky road sticking to the tin.
MIX
2.Place Noshu 98% Sugar Free Choc Baking Chips and coconut oil in a microwave proof bowl. Melt in the microwave in 30 second increments, stirring each time, until fully melted.
3.Combine shredded coconut, marshmallows, gummies, peanuts, macadamias, cranberries and rice bubbles into a large mixing bowl.
4.Pour your melted Noshu choc into the large bowl and mix until all the mix ins are fully coated in melted choc.
SET
5.Transfer your Rocky Road mixture into your prepared baking tin. Cover and set aside overnight, or until the mixture has fully solidified.
6.Cut into 20 squares and enjoy!

7.Keep refrigerated in an airtight container for up to 4 weeks.
