Mexican sausages and beans

This one pot dish will be a real weeknight favourite - delicious beef sausages are sauteed with fresh vegetables, mixed beans and flavour packed Mexican spices. Serve hot with warm tortillas and you've got yourself a family winner!

Ingredients

Method

1.Heat half the oil in a shallow saucepan over high heat. Add sausages. Cook, turning, for 10 minutes or until browned and cooked. Transfer to a heatproof plate. Chop coarsely.
2.Heat remaining oil in same pan over moderate heat. Add onion, capsicum and zucchini. Cook and stir for 5 minutes or until softened. Add seasoning mix. Cook and stir for 1 minute or until fragrant.
3.Add tomatoes and 1/2 cup water; bring to the boil. Add sausage and bean mix; cook for 10 minutes or until mixture has thickened slightly. Stir in half the coriander. Sprinkle with the remaining coriander. Serve with tortillas.

Warm tortillas in the microwave as packet directs. You could use pork or chicken sausages instead of beef.
