Method
1.Heat olive oil in a large saucepan; stir in garlic until fragrant. Add couscous, harissa and tomatoes and stir over medium heat for a minute or two.
2.Add vegetable soup and water; bring to a boil then reduce heat and simmer soup, uncovered, about 5 minutes or until the couscous is just softened.
3.Serve bowls of soup sprinkled with pine nuts and a little fresh coriander.
