Method
1.Heat oil in large saucepan, cook onion, garlic and thyme, stirring, until onion softens and begins to caramelise.
2.Stir in remaining ingredients, bring to the boil. Reduce heat, simmer, uncovered, 15 minutes. Season to taste. Stand 10 minutes.
3.Blend or process tomato sauce, in batches, until smooth. Cool.
4.Pour sauce into sterilised jars, seal immediately. Keep in a cool place for up to a year.
