Method
1.Preheat oven to moderate, 180°C. Lightly grease and line a 22cm round cake pan.
2.Arrange pear slices evenly in base of pan. Drizzle with maple syrup. Set aside.
3.In a large bowl, combine almond meal and flour.
4.In a separate bowl, whisk together eggs, sugar and vanilla. Mix in butter. Pour into almond meal mixture and lightly fold together. Pour over pears in pan.
5.Bake 1 hour, or until cooked when tested with a skewer.
6.Cook in pan 10 minutes before inverting onto a wire rack. Dust with icing sugar.
