Method
1.Peel kumara and cut into approximately 5mm slices. Arrange kumara slices in a single layer over the base of a large greased oven tray.
2.Bake in a 200°C preheated oven for 15-20 minutes until tender, turning slices halfway through cooking time.
3.Place rocket mix over a large serving plate, top with kumara slices, then sprinkle with walnuts and feta.
4.To make dressing, combine oil and vinegar in a jar, shake well.
5.Drizzle dressing over salad just before serving. Garnish with cracked pepper.
Kumara slices can be baked several hours ahead. Keep covered. Assemble salad and add dressing just before serving.
