Method

1.Heat oil in large frying pan, add onion; cook, stirring, until onion is softened. Add spinach; cook, stirring, until spinach is wilted. Remove from heat. When cool enough to handle, squeeze excess moisture from spinach; chop coarsely.
2.Combine spinach mixture in medium bowl with cheese, herbs and egg.
3.Preheat oven to 200°C/400°F. Oil oven trays; line with baking paper.
4.Brush 1 sheet of pastry with ghee; top with a second sheet and brush with ghee. Cut layered sheets into 4 strips lengthways. Place rounded teaspoons of spinach mixture at one end of each strip. Fold one corner of pastry diagonally over filling to form a triangle. Continue folding to end of strip, retaining triangular shape. Brush triangles with a little ghee. Repeat to make a total of 48 triangles.
5.Place triangles on trays. Bake 15 minutes or until browned lightly.
