Ingredients: 8 slice (360g) wholemeal bread; 8 slice (240g) leg ham; 40 gram butter; 4 eggs; Cheese béchamel; 20 gram butter; 1 tablespoon plain flour; 3/4 cup (180ml) milk; 1/2 cup (60g) cheddar, finely grated; 1 tablespoon fresh flat-leaf parsley, finely chopped

8 slice (360g) wholemeal bread

8 slice (240g) leg ham

40 gram butter

4 eggs

Cheese béchamel

20 gram butter

1 tablespoon plain flour

3/4 cup (180ml) milk

1/2 cup (60g) cheddar, finely grated

1 tablespoon fresh flat-leaf parsley, finely chopped

Method

1.To make the cheese béchamel: In a small saucepan, melt butter over medium heat, add flour; cook, stirring, for about 1 minute, or until mixture bubbles and thickens. Gradually add milk; cook, stirring, for about 1 minute, or until sauce boils and thickens. Remove from heat; stir in cheese and parsley.

2.Spread béchamel onto bread slices. Top four slices with ham, then remaining bread.

3.In a large frying pan, melt butter over medium heat. Add sandwiches; toast, in batches, for about 2 minutes, or until browned both sides.

4.Fry eggs in the same pan for about 2 minutes, or until cooked to your liking; place an egg on each sandwich. Serve.
