Ingredients
Tomato and sweet chilli relish
2 teaspoon olive oil
1 red onion, chopped finely
800 gram ripe tomatoes, chopped coarsely
1/2 cup (125ml) sweet chilli sauce
1/2 cup (110g) white sugar
1/4 cup (60ml) red wine vinegar
2 teaspoon kosher salt
Method
Tomato and sweet chilli relish
1. Heat oil in large saucepan; cook onion, stirring, until soft. Add remaining ingredients; cook, stirring, over high heat, without boiling, until sugar dissolves.
2. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 40 minutes or until relish is thick.
3. Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.
