Method

1.Chop the crusts from the bread and process into crumbs in the food processor. Melt the butter in a heavy-based frying pan and sauté the onions until soft and translucent, adding the chopped bacon towards the end.
2.Keep cooking until the bacon has browned. Cool slightly. Mix with the breadcrumbs, lemon rind and herbs, seasoning with salt and pepper.
