White bean puree

Delicious as a dip, or served as a side alongside chargrilled meat or chicken, this white bean puree is lovely and garlicky. For a bit of colour, top with some thinly sliced green onions just before serving.

Ingredients

Method

1.Process beans, almonds, lemon juice and garlic in a food processor until smooth.
2.With motor running, gradually add the olive oil until thick and creamy.
3.Transfer mixture to a saucepan. Stir over low heat until warm. Season with salt and ground black pepper. Transfer to a serving dish; drizzle with oil and sprinkle with pepper.
